  29. Take Maida / Plain flour for dusting

  32. Get boondi soaked in a water for 5-6 minutes

  34. Make ready Coriander leaves chopped
  35. Make ready Red chilli powder
  36. Make ready cumin powder
  37. Take chaat masala

Steps to make Special Lunch : Choley, Bhature, Boondi Onion Raita:
  1. Choley:- Firstly, heat oil in a cooker, saute bay leaf, cardamom and cumin seeds. Add onion and ginger garlic paste saute till it turns golden brown.
  2. Add tomato paste and saute till they strt releasing oil.
  3. Add all the spices mix well, cook for 1-2 minutes.
  4. Add boiled chickpeas and 2 cup water give a good mix.
  5. Pressure cook for 2-3 whistle on medium flame.
  6. Allow the pressure to release by itself sprinkle Coriander leaves. Ready
  7. (Bhatura):- Firstly, in a large mixing bowl take maida, rava, sugar, salt, baking powder and baking soda mix well.
  8. Add oil rub with flour, also add curd and start to knead dough.
  9. Grease the dough with oil, cover and rest for 2 hours.
  10. Make balls between your palm.
  11. Roll dough evenly into circles using rolling pin.
  12. Heat oil in a deep frying pan or kadhai.
  13. Drop bhatura into hot oil and press with the spoon to puff up.
  14. Flip and fry the. Bhatura till golden.
  15. Then drain the bhatura into tissue paper to remove excess oil.
  16. Finally Serve Bhature with choley, boondi Raita & pickle.
  17. (For boondi Raita):- Take a bowl whisk curd add salt, cumin powder, red chilli powder and add soaked boondi, onion, coriander leaves mix well sprinkle little chaat masala Ready.
