  8. Prepare 2 onions,chopped

  13. Get 1 tsp shahi jeera/caraway seeds
  14. Get 3 cloves
  15. Take 3 cardamom crushed
  16. Take 1 inch cinnamon
  17. Take 1 bay leaf
  18. Take 1 star anise
  19. Take 15 cashew halves
  20. Make ready 1 cup onion sliced
  21. Get 1/2 cup carrot roundels
  22. Get 1/2 cup potato cubed
  23. Prepare 1/2 cup tomato chopped fine
  24. Prepare 1 cup basmati rice
  25. Take 2 cups water
  26. Get to taste salt
  27. Make ready 2 tsp lime juice

Grind Pudina, Coriander leaves, green chillies, ginger and garlic to a fine paste. Put a pressure cooker on the stove and add the oil. When it is hot add cinnamon stick, cloves, cardamom, bay leaf and fennel seeds. pudina rice is a Indian style mint rice which is pressure cooked pudina rice. Bursting with a peppy flavour, the pudina rice is a delightful one-dish meal, which you can just serve with a cup of curd.

Steps to make Mint rice (pudina chawal):
  1. Grind all the ingredients given under 'to grind' to a smooth paste.
  2. Wash and then soak rice for 20 minutes.
  3. Heat ghee in a pressure cooker. Add caraway/ shahi jeera, clove, cardamom, bay leaf, star anise and cinnamon. Splutter. Then add onion and turmeric powder and saute till golden brown.
  4. Add cashew and let it fry. Add tomatoes and fry till pulpy. - Now add the ground paste and saute till raw smell goes. - Add rice and saute till rice is lightly fried. - Add vegetables and boiling hot water. Add salt and lime juice.
  5. Put on lid of the cooker. When steam comes through, put weight on and cook on medium flame for 2 whistles. Immediately put off heat. Let steam subside on it's own. Then open. Serve hot.
