The ingredients needed to make Berry Pulao:
  1. Take 1 1/2 cup Basmati Rice
  2. Take 1/4 cup mix of cranberries, blueberries, raspberries, raisins
  3. Make ready 1 bay leaf
  4. Get 1-2 cloves
  5. Make ready 1 inch cinnamon stick
  6. Take 2-3 green cardamoms
  7. Take 1 large onion chopped
  8. Take 1 Tbsp cashew nuts
  9. Get 1/2 cup milk
  10. Make ready pinch Saffron
  11. Prepare 1 tsp ginger chopped fine
  12. Get as needed Ghee
  13. Get 3 tsp Oil
  14. Prepare to taste Salt
Instructions to make Berry Pulao:
  1. In a pan heat oil and fry ginger and onion until translucent. Add mixed berries and fry for 1-2 mins. Set aside
  2. In a heavy bottomed pan add water, bay leaf, cloves, cinnamon stick, green cardamoms. Add basmati rice and cook until 3/4th done. Drain and set aside
  3. In a bowl add the saffron to the milk. Set aside.
  4. In a wok heat oil & ghee and on low flame add fried berries first, then add 1 ladle of rice, add saffron dipped milk. Repeat the process one more time. Garnish with cashew nuts. Put on dum for 10 mins. Enjoy hot
