- In a wok or frying pan, heat the olive oil over a medium heat, then add the onion and garlic and fry for 2-3 minutes or until the onions are soft.
- Add the cod and combine with a wooden spoon.
- Add the potatoes gently stir, carefully not to break the potatoes too much.
- Add the eggs and the parsley and gently mix it all together.
- Check seasoning, add more salt and pepper if needed and sprinkle with parsley. Serve immediately.
